Glucose syrup is the essential ingredient for the making of many pastries (because it avoids the crystallization of sugar), for ice (it stabilizes the texture and increases the softness), for sugar pulled, puffed and sugar decorations, for nougatine, for fruit pasta, gums and also for softening ganaches. Glucose syrup has been used for more than a century by pastry chefs, confectioners and chefs.
It is colourless and odourless. It is a pure carbohydrate, it contains neither fat nor protein. Its caloric intake is identical to that of sugar about 4 Kcal/g.
Glucose syrup is mainly used for its anti-crystallizing power and preservation properties:
- Anti-crystallization of sugar: glucose prevents the crystallization of sugar because glucose fats sugar, incorporated into a sugar cooking, it prevents it from massing (crystallizes) afterwards
- Anti-crystalization of water: Glucose prevents the crystallization of water during freezing, so your ice creams will be smoother and softer in texture. Glucose also has the property of lowering the freezing point.
- Preservation: the shelf life of your ice creams and desserts will be extended through the use of glucose. It delays drying and ensures longer shelf life of products.
The liquid texture of glucose syrup makes it easy to work with and allows it to have a good hold. It is characterized by an equivalent in dextrose close to 44.
