This "double-sided sharpening stone" pack is the ideal tool to sharpen and care for your GLOBAL knives in the best conditions.
Your stone comes with a well-designed non-slip holder to store it and sharpen your knives directly. This pack is accompanied by two sharpening guides to precisely respect the sharpening angle of the knives Global.
This clumped ceramic sharpening stone is specially designed to sharpen your GLOBAL knives according to Japanese tradition and finely polish them.
How do I sharpen a Global knife?
Dip your original Japanese sharpening stone into the water for about 10 minutes so it's well-soaked. Important: The stone should always be moist during sharpening. Water acts as a lubricant, so it needs to be moistened regularly. The sharpening angle is usually 15 to 20 degrees compared to the sharpening stone.
Then in a movement going from the outside to the inside exert a slight pressure to drag the knife six to ten times on the sharpening stone.
A powdery mass appears and promotes the sharpening process. Finally, rinse your knife with hot water and dry it with a soft cloth.
Warning: You will not be able to sharpen knives on a serrated board (bread knife for example) with a sharpening stone.
(Cutting knives should be sharpened 80% at the front and 20% at the back; for double-edged 70% at the front and 30% at the back.)
Note: The Global double-edged knives are designed for right-handers, i.e. sharpened on the right side at 70% and on the left side at 30%. It will therefore be necessary to sharpen 7 x on the right and 3 x left the right-handers, the opposite for left-handed.

Pierre fantastique achetée à petit prix chez Colichef !emballage parfait, livraison un tout petit peu longue ( mais ça en valait le coup! ) Je ne l'utilise que pour mes lames Global et, en tant que débutante pour ce qui à trait à l'aiguisage sur pierre, je puis vous dire que les guides qui viennent dans ce lot,les instructions ainsi que les deux faces de grains differents pour moduler l'aiguisage sont nickel pour obtenir déjà d'excellents résultats in fine, c'est un pur plaisir de faire la mise en place pour quelque production culinaire que ce soit !
