It is strongly advised to sharpen knives Misono once a week. The stone must be soaked in water beforehand. For a good sharpening, let the knife slide without pressing and insist more on the side of the face. Always start with the tip.
The stone should retain a flat surface (they can be maintained by rubbing them on top of each other)
